Sunday Supper: Penne alla Vecchia Bettola

Ina Garten is my food idol and here is why.  She is completely self taught and didn’t start her career in food.  Early in her career, she realized that food made her happy, took a leap of faith, bought a little deli and the rest is history.  Her food is approachable, easy and always tastes good.  Most importantly, her recipes never fail. 

I have made so many of her recipes and honestly can’t pick a favorite but there are some true stand outs.  Now this recipe isn’t her's but she did pick it as a favorite and learned how to make it. This pasta dish comes from one of Ina’s favorite Hamptons restaurants, Nick and Toni’s.  It might seem like penne alla vodka and technically it is.  However, it is the best penne alla vodka you will ever have.

Sunday Supper: Beef Stew

One ‘American’ dish my mother made for us growing up was beef stew.  I’m not even sure when she picked up the recipe for it or why it became a winter dish in our home, but I remember coming home from school and finding a large pot of it on the stove.

Once the cold weather rolls in, I always make beef stew served on top of some buttery noodles or even on its own.  It's the ultimate stick to your ribs, warm you up kind of food and, best of all, it’s a ‘one pot wonder.’

Sunday Supper: Carnitas

Carnitas is a very delicious Mexican dish.  Carnitas simply means “little meat” in Spanish and once you let this big cut of pork cook for two hours that is exactly what you get.  Delicious, little nuggets of pork that you can fold into a warm tortilla, add your favorite toppings and spritz with some lime for the perfect balance of fat, salt and tart.

Sunday Supper: Pasta alla Bolognese

Last week, I shared a recipe for my mother’s Sunday Sauce.  This week, I want to show you how the Sunday Sauce can be used to make another Italian favorite, Pasta alla Bolognese.  This pasta sauce originated in Bologna, Italy way back in the 18th century.  It consists of a tomato based sauce mixed with ground meat. Traditionally, it is served on top of tagliatelle or another long pasta like linguine.

Sunday Supper: It All Starts With the Sauce...

Italian tomato sauce is a labor of love.  It’s also the cooking liquid for various meats that are served alongside a huge platter of pasta.  A Nonna would begin making her sauce early on Sunday morning, while the rest of us were still deep in our REM sleep cycle.  They did this because once the sauce had reached bubbly perfection; they could begin creating all the other delicious dishes that would cover the Sunday dinner table.

Sunday Supper: Sunday Sauce

The sauce for this dish provides a lovely topping to pasta and the ‘bath’ for the meatballs to simmer in.  Once the meatballs are removed, the sauce carries the aroma of the meat and tastes wonderful on pasta.  The meatballs should be served along side the pasta, NOT on top, as that is the true Italian way.
