double chocolate zucchini muffins
yields 24 muffins
INGREDIENTS
2 large zucchini, grated and drained
1 ½ cups all purpose flour
½ cup unsweetened cocoa powder
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 cup granulated sugar
½ cup greek yogurt
½ cup neutral oil
2 teaspoons vanilla extract
1 ½ cups dark chocolate chocolate chips
Preheat oven to 350 degrees.
Mix dry ingredients together and set aside. Cream eggs and sugar until creamy. Add yogurt, oil and extract and combine. Gradually add dry until just combined. Fold in zucchini and chocolate chips.
Bake for 20 minutes.
