peach cobbler
ingredients
6 fresh peaches, washed and cut into 2 inch chunks
1/4 cup dark brown sugar
1 tablespoon cornstarch
zest and juice of one lemon
1 teaspoon almond extract
1 teaspoon ground cinnamon
1 teaspoon kosher salt
topping
1 1/2 cups AP flour
1/2 cup granulated sugar
1 teaspoon baking soda
1 teaspoon baking powder
1/2 cup unsalted butter, cubed
1/2 cup whole milk
juice of one lemon
1 teaspoon almond extract
sugar in the raw and eggg wash
procedure
preheat oven to 350 degrees.
butter a small, 3 quart baking dish.
mix all the filling ingredients and place in the baking dish. place the peach mixture in the oven while it preheats.
make the topping. add all the ingredients to a food processor and blitz until just combined.
remove the hot filling from the oven.
spoon dollops of the dough on top and add egg wash and raw sugar.
bake until the filling is bubbling and soft and the top is golden brown, about 40 minutes,
