homemade tomato soup

ingredients

4 lbs ripe tomatoes, chopped and seeded

4 tablespoons extra virgin olive oil

kosher salt and fresh cracked pepper

I head of garlic, top sliced to expose the cloves

1 red onion, rough chop

1/2 cup basil

1 tablespoon dried oregano

1/4 cup white wine

1/2 cup vegetable broth

1 cup heavy cream

preheat oven to 425 degrees. place all the ingredients except broth and cream on a sheet pan.

roast for 40 minutes.

remove from oven, blend with cream and broth and serve!
