homemade chicken fingers

breadcrumb mixture

  • 1 1/2 cups panko breadcrumbs

  • 1 teaspoon paprkika

  • 1 teaspoon dried oregano

  • 2 tablespoons sesame seeds

  • extra virgin olive spray

marinade

  • 1 egg

  • 1 tbsp mayonnaise

  • 1 1/2 honey mustard

  • 2 tbsp flour

  • 1 tsp kosher salt

  • juice of one lemon

Preheat oven to 400 degrees

Pour all the breadcrumb ingredients on a baking sheet and shake to combine.

Pour all the marinade ingredients in a bowl

Dredge the chicken in the marinade and then in the breadcrumbs and lay on a heavily oiled baking sheet. (13 x 18 pan) about 1/4 cup oil.

Drizzle oil or spray the oil all over the chicken tenders. Place in the oven for 10 minutes on the highest rack.

After 10, flip the chicken and cook for another 10.

Serve immediately with sauce of your choice.

1/2 cup mayo mixed with honey mustard and bbq.
