smash burger tacos
INGREDIENTS
1 pound 90-95% ground beef
Kosher salt
Ground pepper
8 slices American cheese
4 flour tortillas

1/2 cup chopped onion
1 cup shredded lettuce
1 cup chopped tomato
INGREDIENTS
SECRET SAUCE
1 cup mayonnaise
2 teaspoons ketchup
2 teaspoons sriracha (optional)
1 tablespoon sweet relish
1 teaspoon garlic powder
1 teaspoon smoked paprika
METHOD

STEP 1
First, make the secret sauce. Add all the ingredients together in a bowl and combine. Taste and adjust based on preference and heat level. Store in the refrigerator for up to 7 day in a air-tight container.
STEP 2
Heat a nonstick pan or griddle on high heat. Divide the meat into four equal balls. Place them on the grill, season with salt and pepper and flatten them immediately with a heavy duty spatula or grill press.
STEP 3
Release the press after 30 seconds and flip the burger. Place a piece of cheese on top of each burger and cover with the tortillas. Place a hand on the tortilla and slice the spatula under the burger and flip in one quick motion.
STEP 4
Once flipped, add another slice of cheese on top and cover for 10 seconds, to melt the cheese.
STEP 5
Remove from the grill and add the secret sauce and toppings. Fold and serve immediately.
