protein drop biscuits

2 tablespoons olive oil

2 cups chopped spinach

3 scallions, chopped

4 sun-dried tomatoes, chopped

1 3/4 cups almond flour, or AP flour

1 1/4 cup cottage cheese, I love Good Culture

4 eggs

1 teaspoon baking soda

1 teaspoon kosher salt

1 cup shredded, low moisture mozzarella cheese

Preheat the oven to 350 degrees.

Heat oil on medium in a sauté pan. add the spinach, scallions and sun-dried tomatoes and saute until soft. 3 minutes.

in a large bowl, combine the flour, cottage cheese, eggs, baking soda and salt.

Add the cooked veggies and mix to combine.

drop the mixture on a parchment lined baking sheet with a 2 tablespoon ice cream scoop or big spoon.

Press a pinch of mozzarella into the top of each biscuit.

Bake for 25 5o 30 minutes. Enjoy hot or nuke for 10 seconds.
