chicken crust pizza
Gluten free and high protein!!!
1 lb organic ground chicken
1 egg
1 teaspoon kosher salt
1 teaspoon fresh cracked black pepper
1 teaspoon garlic powder
1 tablespoon tomato paste
1/2 cup finely grated Parmigiano Reggiano cheese, divided
1/4 cup chopped parsley
1/2 cup GF breadcrumbs

1 cup marinara sauce
2 cup grated low-moisture mozzarella cheese
Preheat oven to 400 degrees.
Mix all the ingredients (only 1/2 of the parmigiano cheese) for the crust in a bowl and mix to combine.
Line a baking sheet with with parchment paper and place the chicken mixture on top. Press into a large circle. Sprinkle the rest of the Parm on top.
Bake for 25 minutes.
Remove from the oven and spread the sauce evenly over the baked crust.
Add cheese.
Bake for another 10 minutes until cheese is golden and bubbly. Slice and serve!
