chicken parm burgers

2 tablespoons extra-virgin olive oil, plus more for sheet pan

2 cloves garlic

1 medium yellow onion, cut into quarters

2 tablespoons fresh parsley leaves

1 tablespoon tomato paste

1 egg

1/4 cup milk

2 teaspoons kosher salt

1 teaspoon freshly ground black pepper

1 cup plain breadcrumbs

1 pound ground chicken

To Assemble

2 cups tomato sauce

5 thin slices mozzarella cheese

Grease a 9- by 13-inch sheet pan with olive oil. Preheat oven to 350 F and place the greased pan in the oven while it preheats.

In a small food processor, combine the garlic cloves, onion and parsley. Process until finely chopped.

In a large bowl, add the onion mixture, tomato paste, egg, milk, salt, pepper and breadcrumbs. Mix to combine and then add the ground chicken, folding into the bread mixture to fully incorporate. Divide the mixture into 5 equal portions and form into patties (about 3/4 cup each).

Remove the hot baking sheet from the oven and carefully place formed burgers on to the sheet pan.

Place in the oven for 10 minutes. Remove from the oven, flip the burgers and add the sauce and cheese. Cook for an additional 5 minutes.

ASSEMBLE:

Place a bit of sauce on the bottom of the roll, add the burger and a few pieces of basil.
