Italian Roasted Chicken with Salsa Verde

Used my large Wonder Oven for this one and I’m obsessed!

Makes 4 to 6 servings

For the Chicken:

3 garlic cloves

1 teaspoon kosher salt

1 teaspoon fresh cracked black pepper

juice of one lemon

1/2 bunch flat parsley

1/4 cup extra virgin olive oil

For the Salsa Verde

1 clove of garlic

1 teaspoon kosher salt

1 teaspoon fresh cracked black pepper

1/2 bunch parsely

1/4 cup capers

3 anchovy fillets

juice of one lemon

1/2 cup extra virgin olive oil

Place all the ingredients for the chicken into a food process and grind into a paste. Spread it all over the chicken.

Place the chicken in the Wonder Oven and set the oven to 350 degrees for 60 minutes. While the chicken is roasting, make the salsa verde. Add all the ingredients into the food processor to make the salsa verde.

Remove the chicken from the Wonder Oven and serve with the salsa verde.
