Girelle

Girelle, in Italian, means swirl. So, here, the panini preparation is simply baked, cut side up to create a swirled bun.

Makes 8

 

1 tablespoon extra-virgin olive oil 

1-pound sweet Italian sausage

1 All Purpose Dough

8 ounces mascarpone cheese, room temperature

3 cups shredded, low moisture mozzarella cheese

10 ounces frozen spinach, defrosted and pressed dry

 

In a large skillet, heat the olive oil over medium-high heat. Add the sausage and break into pieces using the back of a wooden spoon. Continue to cook, stirring frequently, until the sausage is golden brown and cooked through, 7 to 9 minutes. Using a slotted spoon, remove to a paper towel-lined plate and allow to cool to room temperature. 

 

Meanwhile, preheat the oven to 375ºF. Line two baking sheets with parchment paper. On a lightly floured surface, roll out the dough to a large rectangle, approximately 12x22-inches.

 

Spread the mascarpone cheese evenly over the dough. Then cover the mascarpone with the mozzarella and then the spinach and then place small pieces of the sausage on top.

 

Starting at the vertical edge, carefully roll up the dough to create a log.

 

Cut 1 ½ -inch slices into the log. Carefully lay onto the prepared baking sheets cut side up and brush with egg mixed with 1 teaspoon of water. Sprinkle a pinch of salt onto each pinwheel. Allow them to rest while the oven preheats.

 

Bake for 25 to 30 minutes until puffed and golden brown.
