summer fruit & cheese tart

 Have fun making this tart based on what you have on hand.

Here’s what you need

1 large sheet of puff pastry

8 ounces scallion vcream cheese

1 teaspoon lemon juice

2 teaspoons sour cream

1 to 2 peaches

1 to 2 plums

2 cups cherry tomatoes

1 large ball of burrata

handful of fresh herbs

sea salt, for garnish

Preheat the oven to 400 degrees

Place the puff pastry on a baking shee4t and create a border with a sharp knife.

using a fork, dot the dough so it helps create the border.

brush with egg wash and bake for 20 minutes

while its baking, mix the cream cheese with the lemon juice and sour cream. leave out at room temperature

remove the baked tart from the oven and press down the center with the back of a spoon so the crust is raised.

smear with the cream cheese mixture.

cut the peaches and plums and place decoratively. same with the tomatoes.

tear the burrata and place on top. sprinkle with fresh herbs and sea salt.

serve at room temperature
