leaning towers of zucchini

2 large zucchini, thin sliced rounds

1 egg, beaten + 1 tablespoon of water

1 teaspoon kosher salt

1 cup seasoned Italian breadcrumbs

1/3 cup Parmigiana Reggiano + more for garnish

 1/2 cup olive oil

preheat oven to 400 degrees

Line a baking sheet with parchment paper.

coat the zucchini round in the egg wash and salt

In a large bowl, mix the breadcrumbs and grated cheese. Toss the wet zucchini rounds in the breadcrumb mixture to coat.

make small tablespoon puddles of evoo on the baking sheet and pile tfour zucchini rounds on top of each other in a stack.

bake for 30 minutes.

grate with more Parm for serving.
