Italian Tuna Salad
2 jars tuna fillets packed in olive oil, about 1 ½ cups
5 to 6 marinated artichokes
1 tablespoon capers
Juice of half lemon
1 teaspoon kosher salt
1 teaspoon fresh cracked black pepper
1 teaspoon dried oregano
Place all the ingredients, including the oil from the tuna jars into a food processor and pulse to desired consistency. Adjust salt according to taste.
