fish tacos

1 pound fresh cod, cut into strips

1 cup flour

1 teaspoon kosher salt

1 teaspoon paprika

1 egg

1 teaspoon baking soda

1 cup ginger ale

1/2 cup neutral oil

mix the flour, salt, paprika, egg, baking soda, ginger ale in a large bowl til smooth

heat the oil on medium heat on a large cast iron skillet. fry the fish on both sides for two minutes until golden brown and just cooked through.

drain on a paper towel lined plate

cabbage slaw

1/2 head of green cabbage, sliced thin

1/4 cup chopped cilantro

1/2 cup mayonnaise

1 teaspoon kosher salt

juice of one lime

1/4 cup honey

mix these ingredients together in a large bowl

avocado crema

1 avocado

1/2 cup of sour cream

1 teaspoon kosher salt

blitz these ingredients in a food processor til smooth

for assembly

4 corn tortillas, warmed

place the tortillas on a place, smear with the cream, top with fish and cover with slaw, serve immediately.
