1 tablespoon avocado oil + more for assembly

1 pound, lean ground beef

1 tablespoon taco seasoning

4 corn tortillas, fried

4 large 10-12 inch flour tortillas

2 cups chopped lettuce, I like romaine

1 cup chopped tomatoes

1 cup sour cream

prepared nacho cheese sauce

Prepare the filling ingredients

Heat the tablespoon of oil in a large skillet and cook the ground beef, breaking it up until it is almost brown. Sprinkle in the taco seasoning and 1/4 cup of water. Mix until thickened ad cooked through. Set aside.

To assemble, Place the flour tortilla on the counter and place 1/4 of the ground beef on top. Top with the fried corn tortilla, 1/4 cup of lettuce, 1/8 cup of the tomatoes and a drizzle of the nacho sauce.

Spread sour cream on the edge of the flour tortilla and fold up the edges to cover the filling.

Heat a large plan with and drizzle a bit of oil in the pan. Fry the tortilla on both sides and serve immediately.
