Cheez-Its

8 ounces mild cheddar cheese, shredded

4 tablespoons unsalted butter, at room temp

3/4 teaspoons kosher salt

1 1/2 cups all purpose flour

up to 1/4 cup of water

Combine the cheese, butter and salt in a stand mixer until fully combined and resembles very coarse sand.

Add the water is small amounts until a smooth dough forms. You may not need all of it.

Mold the dough into a disk, wrap it in cling wrap and put in the fridge for 30 to 45 minutes.

Preheat the oven to 375 degrees.

Roll the dough into a very thin sheet on parchment paper as it will make it so that it doesnt stick.

Cut the dough into 1 inch squares. If you have a pastry cutter you can achieve the ridged edges. If not, a sharp knife will do.

Use a chopstick end to make a small hole in the middle of each square.

Detach each of the squares from each other and place the them on a 13x18 baking sheet.

Place the baking sheet on the middle rack for 10 minutes. for the last 5 minutes move the sheet to the top rack to get the toasty brown edges.

Remove from the oven and allow to cool completely.
