apple cider muffins
2 cups all-purpose flour
1 ½ teaspoon baking powder
1 teaspoon ground cinnamon
1 teaspoon kosher salt
3 apples, peeled and grated
1/3 cup neutral oil
¼ cup unsalted butter, softened
¾ cup brown sugar
2 large eggs
1 teaspoon vanilla extract
½ cup apple cider
For the topping
4 tablespoons melted butter
3 tablespoons cinnamon sugar
Preheat oven to 350 degrees. In a medium bowl, combine flour, baking powder, cinnamon and salt. Toss in the grated apple and mix to combine.
In a large bowl, add the oil, butter, brown sugar, eggs, extract. Cream to combine.
Add half of flour mixture to the butter mixture and then pour in half of the apple cider. Mix and then repeat with the remaining flour and cider.
Bake for 20 minutes. Remove from oven and immediately brush with butter and sprinkle with sugar. Yum to the yum.
