Super Mom Meals: Mickey Mouse Cupcakes
This week was my darling boy’s 3rd birthday. Just like many boys his age, he loves superheroes, legos, and of course, Mickey Mouse. We brought the kids to Disney this year and the love affair with the big mouse grew to epic proportions. So, for his birthday I decided to make Mickey Mouse cupcakes.
His preschool is probably the last school on the planet that allows outside food, so for birthdays we can bring in cupcakes for the kids to share. The night before the big day, I put on my Super Mom cape and tried to make the best Mickey Mouse cupcakes ever. Personally, I am a huge fan of chocolate covered Oreos. So I thought, I bet I could make a Mickey Oreo if I used regular sized and mini Oreos together.
So, I took apart an Oreo and stuck two mini Oreo sides into the cream filling and then just sandwiched the top on. Viola, here’s Mickey! Then, a quick dip and flip in some melted chocolate and the Mickey Oreo looked pretty darn good!
I called my boy over for approval and he just swooned. He covered me in kisses and told me that he wanted to eat his chocolate Mickey right now. He agreed to wait, however, to share them with his friends the next day. So I popped them in the fridge to set up while I baked the cupcakes.
These cupcakes are a show stopper and with some box cake mix, store bought frosting and a little work to make some Mickey magic, you will be Super Mom once again because who’s the leader of the band that’s made for you and me?
Super Mom Mickey Mouse Cupcakes

Vanilla Cake Mix
Vanilla Frosting
12 Oreos
12 mini Oreos
3 cups semi sweet Chocolate chips, melted with 2 tablespoons shortening
Rainbow sprinkles.
- Bake cupcake mix according to package directions. Make 12 large cupcakes.
- While cupcakes are baking, assemble Oreos. Carefully remove tops of ores from large and minis. Scrape all filling from the minis and place each half in the side of the Oreo with filling. (See picture). Place top of large Oreo back on top and press down carefully.
- Place Mickey Oreo in melted chocolate and then flip to fully coat. Remove with an offset spatula to a parchment lined baking sheet. Using a butter knife, smooth out the chocolate. Place in the fridge for chocolate to harden.
- Once cupcakes are fully cooled, frost and sprinkle. Place one Mickey Oreo on top of each cupcake.
